This quinoa recipe is delicious, healthy and fast, which is sure to surprise your guests. Try it without hesitation!

Ingredients for 4 people:

1 onion
1 small leek
3 carrots
1/4 kg of pumpkin
1/2 head of broccoli or cauliflower
300 g of spinach
200 g quinoa olive oil


  • We cut all the vegetables into thin slices and place them in a casserole in this order: first the onion, then the leek, the carrots, the pumpkin, the broccoli (or cauliflower) and finally the spinach.
  • Season the vegetables with a drizzle of oil, add the salt, cover it and let it cook over a very low heat, until the vegetables are well cooked.
  • Besides, we boiled theio "target =" _ blank "> quinoa with water and salt for about 12 minutes, then drain it and we can serve the vegetables with this accompaniment.
  • Simple, healthy and tasty!
