TERESA CARLES MANUFACTURING, S.L.U. participa en el proyecto “Nuevo proceso de fabricación industrial de kombucha estable a temperatura ambiente conservando probióticos y propiedades organolépticas” acogido a la línea de ayudas agroalimentario (PERTE AGRO) financiado por el Ministerio de Industria, Comercio y Turismo en el marco del Plan de Recuperación, Transformación y Resiliencia
La empresa TERESA CARLES MANUFACTURING, S.L.U. está centrada en el desarrollo de un proyecto de Investigación Industrial con título “Nuevo proceso de fabricación industrial de kombucha estable a temperatura ambiente conservando probióticos y propiedades organolépticas” y con número de expediente PAG-020100-2023-165. Este proyecto tiene por objetivo la investigación y posterior desarrollo de un nuevo proceso de fabricación de la kombucha que permita que el producto permanezca estable a temperatura ambiente durante mínimo 12 meses. Como principales ventajas tecnológicas del nuevo proceso están la conservación de las propiedades nutritivas y los beneficios para la salud, así como de las propiedades organolépticas que son distintivas de las kombuchas Flax & Kale, con el evidente ahorro energético en la fabricación, conservación, distribución y almacenamiento que supone.

El proyecto primario está incluido dentro del proyecto tractor con título “From Green to Healthy hacia un fortalecimiento de la cadena de valor agroalimentaria mediante la innovación, digitalización y mejora de su sostenibilidad (FG2H)” y número de expediente PAG-010000-2023-12 que cuenta con una participación de 22 empresas repartidas en distintos puntos del territorio nacional.
El presupuesto financiable aprobado del proyecto primario es de un total de 541.887,00€ que la entidad está desarrollando en sus instalaciones desde abril 2023.

At first glance, it is a whitish, gelatinous formation that grows on the surface of sweetened tea. Although it is often called a mushroom, because its appearance and texture make it resemble some fungi that grow on the trunk of certain trees, it is not. It is a culture to initiate the fermentation of tea.

This culture is made up of bacteria and yeasts that live in perfect symbiosis, hence its name SCOBY, which stands for "symbiotic community of bacteria and yeasts".

Kombucha tea is obtained by lactic fermentation mainly, to give an acidic drink with gas bubbles. The fungi and bacteria convert the sugar into ethyl alcohol, carbonic gas and acetic acid and form on the surface of the liquid a jellyfish-like gelatinous body called SCOBY.
